Pear Almond Tart
Yield – 1 Large Pie



Butter, unsalted – 18oz
Sugar, Granulated – 15oz
Almonds, Blanched – 18oz
Eggs – 5 ea
Vanilla Paste – 1 tsp
Pears, Peeled – 4 ea
A.P. Flour – 1/2 cup
1 Pre-Baked 10 Inch Pie Shell


Preparation Procedure:

In a food processor, grind the almonds to a fine powder. Add the flour sugar, butter (softened), vanilla and eggs until you have a smooth paste. This can be poured directly into a pre-baked pie shell. Arrange the sliced pears evenly on top of the filling lightly pushing down. Bake in a pre-heated oven at 325 degrees for about 45 mins. until the top is lightly browned. Finish by brushing with pear simple syrup


Chef Notes: Use trim from slicing pears to make simple syrup.
