Fresh Green Bean Salad with Whole Grain Mustard Dressing
This is a perfectly fresh Spring salad that goes well alongside sandwiches, grilled chicken, or in any picnic basket!
Start by preparing fresh green beans by snapping off their ends and washing. Bring a large pot of heavily salted water to a strong boil. Once boiling, add the green beans and blanch for about 1 minute. You don’t want them fully cooked, or tender, but about 75% cooked. They should still have a bit of a crunch.
Drain the green beans, and immediately place them into another bowl full of ice water. The cold water will stop the cooking process and help set the bright green color.
Dressing: Mince the shallots and mix with dijon, whole grain mustard, salt, and lemon juice. Slowly whisk in olive oil to emulsify. Toss in your green beans with the dressing and enjoy!
